Zucchini Soup


Even from this sad photo taken by my phone, you can tell Arona is like a slice of heaven. I didn’t take any other pictures of my afternoon there because I was too busy soaking it all in. Apologizes. You will just have to go visit it yourself.

Even though it was an incredibly sunny day and the cafes were packed. I felt very relaxed, sipping iced tea and snacking on chips as a cool breeze came off the lake.

Zucchini Rice Soup

olive oil
1 small onion, diced
3 zucchini, cut into quarter moons
salt and pepper
1/2 c Arborio rice
4 c vegetable stock
2 tbsp fresh parsley
1/4 c Parmesan, grated

In a large soup pot, saute onions in olive oil until softened over medium heat. Add zucchini and toss briefly over high heat. Once zucchini get some golden color, add rice. Saute an additional 1-2 minutes.

Add stock and lower heat. Simmer, covered, for approximately 20 min, stirring occasionally. Once rice is tender, remove from heat. Add fresh parsley and Parmesan. Season with additional salt and pepper, if necessary.
